At an old manor farm on the Welsh borders, Daphne Lambert runs organic wellbeing and cookery courses. She believes we are what we eat, and that when organically grown food comes from the land around us it gives us a sense of true well-being.

The courses take place in a converted barn, part of a square of buildings set around a grassed courtyard with a pond where they have been resting in the rolling hills of Herefordshire since 1280. We run a variety of residential courses and retreats that highlight the interplay between diet and heath. Through practical hands on cookery each course looks at ways to ensure the essential nutrients for life are in our food. Additionally a range of treatments and therapies are offered including yoga, aromatherapy and colonic hydrotherapy.

Courses running throughout the year are:
  • Food & Health Cookery course – How to create a healthy diet.
  • Woman’s Health – Nourishing feminine energy
  • Mamaheaven Retreat – A yoga retreat for mums & babies
  • Feast for the Soul - A journey of self discovery through the preparation and sharing of food.
All courses are residential and participants stay in individual en suite bedrooms. All linen and bath towels are 100% organic cotton and all cleaning and laundry products are eco-friendly. The project was awarded a Millennium Marque award for environmental excellence in 2000.

Daphne Lambert, nutritionist and chef, enables you to create a diet wholly appropriate for you. What we eat is both the cause and effect of our awareness. It reflects our ongoing harmony with ourselves and the rest of the world.

Food and Health Cookery Course
This course is packed full of exciting ideas, recipes and fun. It explains the importance of wholefoods and organic food and demonstrates the principles behind juicing and sprouting. It introduces you to many important ingredients and demonstrates a wide range of exciting organic wholefood dishes.

Women’s Health
This course gives you the background knowledge to take advantage of foods ability to keep you well. Daphne Lambert shows you which foods to eat to help prevent menopausal problems, breast cancer and osteoporosis. She introduces you to nutrient rich superfoods and the power of herbs. She also shows you how to create a diet that gives you energy and radiance.

Feast for the Soul
A new nutritional paradigm that creates a diet wholly appropriate for each person whilst taking into account the larger planetary implications of what we eat. Includes discussions about our beliefs and understandings around food and preparing food together in the kitchen using seasonal, organic, local produce and wild gathered foods.A programme devised and presented by Daphne Lambert & Jonathan Snell

Mamaheaven
Mamaheaven is a yoga-based retreat with full emphasis on the health and well-being of the mother. It is a unique opportunity to de-stress and restore yourself after the momentous experiences surrounding childbirth. Individual bodywork will be on offer, along with other beauty therapies, plus talks on nutrition, alternative remedies, parenting skills and eco-baby care. Throughout the retreat mothers will be encouraged to have their babies with them but childcare will be available at anytime and everyone will go home with a great goody bag. This retreat is a celebration of motherhood and is suitable for all mothers with babies 18 months and under.

The accommodation is lovely, both the bedrooms and the public rooms. We were mostly in the 'food school' part. That was well done and fit for purpose but without spoiling the ambience of the place in general. (more)
how this holiday makes a difference
The complex is run with an organic ethos emphasising the importance of a lifestyle that incorporates seasonal, local and community based production with care for the environment and all things within it. We are 100% organic and the garden and the kitchen are certified organic. We encourage biodiversity – we have a pond and wild uncultivated part of the garden.

We support the Soil Association and encourage our guests to join. All cleaning and laundering products are eco-friendly. All our soaps and toiletries are organic. We have showers and half flush toilets to reduce water use. We use environmentally friendly paints.

We build using natural materials and techniques. We employ local craftsmen and all local staff. We compost or feed dogs and chickens all our food waste. We source as much local produce as possible. We recycle glass and have facilities for our guests to recycle. We use 100% recycled paper in the office.

We collect rain water for use in the garden. All appliances are turned off when not in use. All linen and bath towels are 100% organic cotton, every complimentary gift is sourced from environmentally aware companies such as Neal's Yard and Duchy Originals and all cleaning and laundering products are eco-friendly. We employ local staff and buy all produce locally where possible. We have a supply base of local organic growers and producers.
