The Arts Lounge is a living space dedicated to the celebration of Cambodia's rich cultural heritage. The thought provoking exhibits pay homage to the Khmer heritage and to the revival of a nation's arts, culture and people. The Arts Lounge has a bar and dining menu, and hosts regular visits by "celebrity bartenders" who have created one of a kind signature drinks and tailor made cocktail lists. Afternoon tea with a Cambodian twist is served daily.

Café de la Paix: Open from dawn until late, offers a range of specialties including fresh sandwiches, baguettes, paninis, pides and Mediterranean-inspired salads. Choose from a delicious array of homemade pastries and tortes, ice-creams or chocolates. Sample Italian espresso or organic Khmer coffee and exotic blended drinks. Gourmet picnic baskets, perfect for temple visits, can be arranged by request. Indoor or sidewalk seating is available.

Meric Restaurant: Dining at Meric offers the best of both worlds. Choose from international dishes or a seasonally-inspired Khmer menu showcasing the distinctive harvests of local farmers and untamed surrounds. Heading our culinary team is French Chef & author Cassandra Zukauskas. A native of Tasmania, Miss Cassandra Zukauskas got her first taste of food preparation at the age of 19 when she started to help out in a Sydney restaurant. The desire to create unforgettable flavours and satisfying meals quickly grew into a passion. With a keen appreciation of indigenous produce, she quickly earned a reputation for turning local cuisine into a five-star gastronomic adventure.

Wine Cellar: In our search for quality labels we have identified wines of many different varietals and have chosen to feature the ones that either best represent that varietal or represent a great winery and its wine-making traditions. The Wine Cellar, with floor-to-ceiling temperature controlled wine racks, and custom-designed access ladders, houses an extensive collection of international wines in an ambient setting.

Room Service: In-Room Dining is offered 24 hours daily. The menu includes western and khmer favourites.

The Poolside: The Pool is located out of doors and has an irregular design. It is unusual, as it is privately located on the first floor giving significant privacy and is only partially open to direct sunlight thus minimising the harmful effects of the afternoon sun. A variety of pressurised water features allow guests to relax and indulge themselves, surrounded by lush vegetation. There are several secluded lounging areas and a bridge which gives access to the spa pavilion. The water itself is fresh water and it is chlorinated according to recognised safety standards and is not subject to any temperature control. Guests can enjoy a range of snacks, meals, icecream, gelato and blended drinks at the poolside.

Spa Indochine: Overlooking a Khmer-inspired swimming pool and water garden, the 3 story Spa Indochine offers a haven of peace and tranquillity. 3 Double and 2 single treatment rooms, an open-air deluxe suite, Thai massage and expansive rooftop relaxation terrace offer the ultimate in style and indulgence. • highly commended
This tourism business was Highly Commended in our 2006 First Choice Responsible Tourism Awards the largest awards of their kind in the world, and organised by responsibletravel.com in association with The Times, World Travel Market and Geographical Magazine, of the Royal Geographical Society.

Since 2004, the Awards has recognised individuals, companies and organisations in travel making a big commitment to the culture and economies of local communities and helping to conserve biodiversity.
how this holiday makes a difference
We accept that we have a responsibility to the environment and to the community. As such, the hotel has adopted self-regulated activities to eradicate the adverse effects of its operations, maximize the positive impacts, enhance the environment and to support the local community in a respectful and dignified manner. We willingly educate and encourage competitors, suppliers, guests and others with whom we have dealings to adopt their own responsible tourism policies and attitudes.

The hotel was instrumental in the creation of the Hotel Sewing Training Centre which provides each intake (around 30 “girls at risk”) with essential life and work skills. The hotel continues to support the centre. Towards the end of the course, the students produce products of marketable quality which are then sold at the hotel which further supports the centres operation. The hotel also organises philanthropic visits for its guests to remote poor communities, orphanages and schools. The hotel facilitates sponsorship of these by organising projects of varying sizes, e.g. water well drilling, provision of bicycles, school supplies and building of wooden houses. The hotel also works with Shinta Mani hotel in the support of its Institute of Hospitality (which provides free hospitality education for underprivileged minors).

Guest linen and towels are only replaced at guest request. Aircon units require presence of key cards (and therefore the guest). All equipment is regularly maintained which maximises efficiency. Waste plastic, paper and cans are separated out for re-cycling. Kitchen oils are retained and passed to a local recycling company. We promote local conservation organisations who provide educational tours for tourists.

Normally we use local fruit, vegetables plus most meats and fish. Imported produce is only used when necessary. Executive chef, Cassandra Zukauskas, says "Cambodian cooking really celebrates the harvest. I’m going to continue in this direction by working in season with local farmers, and keeping the flavors and ingredients of fresh markets at the fore.” She also provides assistance to the Shinta Mani Hotel and Institute of Training, which provides first-rate hospitality training and financial support to disadvantaged youths. It is the sister property of Hotel de la Paix, which is dedicated to responsible tourism and the development of the local community.

We employ local staff and give preference to suppliers of local staff. Only our upper management are foreign. Local contractors are used in many areas in which the hotel has insufficient resources, e.g. transport, construction, landscaping, pest control, tour guides, staff meals.

Tourism can be good and bad for destinations & local people.

We carefully screen every holiday against our criteria for responsible travel.

'Look behind the brochure' to find how each holiday makes a difference (see left).

We don't claim to be perfect - there is no global accreditation - but we've led the way since 2001 and screened 1000's of holidays.

We invite every traveller to write a review about their experiences and responsible tourism.

This valuable feedback is sent to the people who run the holidays. We keep a very close eye on it and take off holidays that don't live up to our standards.
