Welcome to the perfect Roman cooking holiday.

Who hasn’t heard of the famous Carbonara or Spaghetti all’Arrabiata? Well, these are just two of the many Roman recipes you’ll enjoy with us. Rome cookery is very varied and includes pasta courses, but also tasty meat courses and delicious fresh vegetables such as Abbacchio alla Romana (Roman style Baby Lamb) and the incredible Fiori di Zucca ripieni (stuffed courgette flowers). And of course, there will be an evening dedicated to making pizza with different toppings according to seasonal products.

You’ll have the chance to get to know true Romans and explore Italy's capital city. Our luxury Villa Roma is an ideal Rome holiday venue and overlooks Bracciano Lake. The villa is the perfect combination of rustic enchantment and luxury: 5 bedrooms, 4 of which are doubles and 1 twin, all ensuite, in the ground floor and a magnificent suite with jacuzzi on the top floor. The kitchen, where breakfast is served and cooking lessons take place is provided with all comforts and instruments for your cookery lessons, plus there's a huge living area with a big fire place and billiard table, TV and stereo.

Bracciano Lake is extremely popular among Roman citizens who want to escape from the busy city. In fact, a lot of Romans have decided to establish themselves in one of the 3 towns along the lake, Bracciano, Trevignano or Anguillara. It’s hard to believe that such a beautiful, historical and uncontaminated place can exist just 30 minutes outside Rome.
day-by-day itinerary
Day 1:On arrival at the villa you will receive welcome drinks followed by dinner
Day 2:After breakfast you have your first cookery lesson, then lunch. In the afternoon there is time to relax before your visit to Bracciano - the largest town on Lake Bracciano. Enjoy a private guided tour of the castle, with time after to wander around the town for aperitifs before returning to the villa for dinner
Day 3:Your second cookery lesson takes place in the morning followed by lunch. The afternoon is yours to enjoy as you wish. There is an optional visit to a local thermal spa, or alternatively you can play a round of golf, or simply relax by the pool. At the end of the day, dinner is served back at the villa
Day 4:Cookery lesson is followed by lunch. And the evening meal is enjoyed out at a local restaurant at Trevignano - an attractive village on the lake.
Day 5:Today, you enjoy a full day in Rome with time for sight-seeing or shopping and then return to the villa for dinner
Day 6:After the cookery lesson, lunch is served. In the afternoon, we visit the historic and artistic town of Calcata and you have the chance to visit the Vicarello spa baths. Dinner is again served back at the villa
Day 7:Morning cookery lesson is followed by lunch. The afternoon you have free to enjoy at your leisure. And then a farewell dinner is served at the villa

Italian cooking holiday, RomeLocally and independently produced Roman wines are important on this course supporting a wealth of local family run vineyards of the region. We make every effort to use local producers for all ingredients in this course which has a direct effect on maintaining the heritage and agriculture of the region.

We operate in a way that increases the positive impacts and decreases the negative ones brought by tourism. We support the local community economically by bringing small carefully monitored groups to rural areas in Italy.

Integral to our courses is the principles of the Slowfood movement a member-supported organization that was founded in 1989 to counteract fast food and fast life, the disappearance of local food traditions and people’s dwindling interest in the food they eat, where it comes from, how it tastes and how our food choices affect the rest of the world.

We believe in promoting the ‘real’ Rome and its culinary heritage. Our property Villa Roma is far enough off the tourist track that we are able to offer a very authentic experience where Italian heritage and traditions stay intact to be handed down to the guests at our schools. Local transport is always used, we use local transport business and local drivers. The use of local drivers means that we have no unnecessary emissions from using transport companies from outside of the region.

We are passionate about always using local suppliers and local produce. It is important for us and our guests that they have an authentic experience of the region that they visit. All produce is sourced from local markets – which form excursions for the clients providing them with an insight and understanding into the agricultural economy of the region.

Family owned local venues are integral to all of our holidays. We have chosen venues not only due to their natural beauty but also as a means of preserving historic buildings and landscapes. All the venues are family run ventures which allows for local character and heritage to be maintained without interference. It also means that while our business grows local business grows with it. With our cooking holidays we aim to educate clients about a sustainable lifestyle during there stay in our properties.

We have a laundry scheme where we only change towels and sheets after 3 days or when guests request them to minimalise the use of detergents. We also ask guests to recycle any plastic or glass whenever possible. We are keen supporters of the AquaSenza scheme where we will only use locally sourced bottled water. This is a scheme where bottled water is rated on its distance from the source, meaning local business and suppliers of water are directly benefited as well as lowering our carbon footprint in terms of transportation costs. We minimalise energy use by using energy efficient light bulbs and turning off lights when not in use in both our offices and in our properties. We restrict the use of paper in our UK office and always recycle. We provide clients with electronic itineraries and e-tickets whenever they have access to the internet.
