Our cooking holidays in Puglia are hosted in the beautiful Casino Pisanelli. The venue was built in the 18th century and is surrounded by acres of olive groves.
With a long and beautiful coastline you are never far from the sea in Puglia so it’s not surprising that fish is a local staple and a focus of our cooking holidays in Puglia. Other ingredients close to the local chef’s heart include mouth watering ricotta cheese, chickpeas, capers, green peppers, aubergines, mozzarella and basil.
There are fantastic market gardens in this region so the vegetables are locally grown, very fresh and often organic. Our itinerary includes a visit to the Otranto market, so that you can experience one of these wonderful markets for yourself! This is a fertile part of Italy and the recipes that you will find on cooking holidays in Puglia reflect this, using abundant local produce and gallons of extra virgin olive oil, cold pressed close by. There are also fantastic vineyards which produce primitivo and salice salentino wines as well as delicious limoncello liqueur. In our opinion, no Italian cookery course should miss out on the chance to sample as many of these local vintages as possible!
The light is bright and clear and the area is awash with seaside colours, which permeate into the way the food of the region is presented with vibrant colours and often a rustic feel to it. The flavours are fantastic.

| Day 1: | On arrival at Brindisi airport you are transfered by minibus to Casino Pisanelli where you will receive welcome drinks and dinner |
| Day 2: | After breakfast you have your first cooking lesson with Antonio followed by lunch. In the afternoon there is a visit to Santa Maria di Leuca (the village at the very tip of the Salentine Peninsula where the Ionian and Adriatic Seas meet). You'll then enjoy an aperitivo at Antonio’s locale in Santa Maria di Leuca followed by dinner at Casino Pisanelli |
| Day 3: | After breakfast cooking with Antonio followed by lunch. You have the afternoon free to enjoy at your leisure and dinner in the evening |
| Day 4: | After breakfast you spend the morning in the kitchen again with another lesson by Antonio followed by lunch. The afternoon is spent exploring the local villages of Ruffano, Tricase and Depressa followed by a private wine tasting at Castel di Salve winery after which you return to Casino Pisanelli for dinner |
| Day 5: | Leave after breakfast for full day outing, firstly to Otranto with the chance to visit the weekly market and then lunch at a typical Masseria in the country. Afternoon visit to Lecce and a private walking tour around the city with an English speaking guide. Dinner at Casino Pisanelli |
| Day 6: | After breakfast cooking with Antonio followed by lunch. Afternoon visit to Gallipoli and the chance to wander around the old town. As for dinner, you dine at an excellent local fish restaurant |

Our 18th century school is Puglia Casino Pisanelli is a historic building that is maintained by its use as our venue. A main focus of our holidays to Puglia is organic local produce. There are fantastic market gardens in this region so the vegetables are all locally grown, very fresh and often organic. We operate in a way that increases the positive impacts and decreases the negative ones bought by tourism. We support the local community economically by bringing small carefully monitored groups to the rural area of Puglia.
Integral to our courses is the principles of the Slowfood movement, a member-supported organization that was founded in 1989 to counteract fast food and fast life, the disappearance of local food traditions and people’s dwindling interest in the food they eat, where it comes from, how it tastes and how our food choices affect the rest of the world. We believe in promoting rural Puglia and its rich culinary heritage. Our property Casino Pisanelli is far enough off the tourist track that we are able to offer a very authentic experience where Italian heritage and traditions stay intact to be handed down to the guests at our schools. We even have our own gardener in the region who maintains the rich landscape surrounding the property of Casino Pisanelli. As with all of our venues all of our staff are local people, which means we support the local economy and you get the inside and authentic knowledge of cooking in the region. Local transport is always used, we use local transport business and local drivers. The use of local drivers means that we have no unnecessary emissions from using transport companies from outside of the region. We are passionate about always using local suppliers and local produce. It is important for us and our guests that they have an authentic experience of the region that they visit. All produce is sourced from local markets – which form excursions for the clients providing them with an insight and understanding into the agricultural economy of the region. Family owned local venues are integral to all of our holidays. We have chosen venues not only due to their natural beauty but also as a means of preserving historic buildings and landscapes. All the venues are family run ventures which allows for local character and heritage to be maintained without interference. It also means that while our business grows local business grows with it. With our cooking holidays we aim to educate clients about a sustainable lifestyle during there stay in our properties. We have a laundry scheme where we only change towels and sheets after 3 days or when guests request them to minimalise the use of detergents. We also ask guests to recycle any plastic or glass whenever possible. We are keen supporters of the AquaSenza scheme where we will only use locally sourced bottled water. This is a scheme where bottled water is rated on its distance from the source, meaning local business and suppliers of water are directly benefited as well as lowering our carbon footprint in terms of transportation costs. We minimalise energy use by using energy efficient light bulbs and turning off lights when not in use in both our offices and in our properties. We restrict the use of paper in our UK office and always recycle. We provide clients with electronic itineraries and e-tickets whenever they have access to the internet. |
Tourism can be good and bad for destinations & local people. We carefully screen every holiday against our criteria for responsible travel. 'Look behind the brochure' to find how each holiday makes a difference (see left). We don't claim to be perfect - there is no global accreditation - but we've led the way since 2001 and screened 1000's of holidays. We invite every traveller to write a review about their experiences and responsible tourism. This valuable feedback is sent to the people who run the holidays. We keep a very close eye on it and take off holidays that don't live up to our standards. |
