People still farm in the old way, producing meats, vegetables, fruit and wine for their own and their neighbours consumption. This is still a landscape of subsistence farming, a way of life which has been wiped out in many places in Europe and that fulfills our standard for suppliers of organic products for Slow Food and cooking at the Homoki Dine.
The use of only at site available natural materials like adobe mixed with straw, acacia tree and wild growing reed were exclusively used for the authentic reconstruction of the estate. The combination of these materials are providing a natural insulation against heat or cold, therefore at high summer temperatures there is no need of air condition. On the roof top of the newer buildings we have solar panels installed to save up the alternative energy. Imagine an average of 280 days of sun shine a year in the area of the southern Great Plains in Hungary!
Homoki Lodge employs at present six local people with specific knowledge in their field. For example: our skilled horse back riding guides had all been working as "Csikos", the legendary Hungarian cowboys herding the Grey Cattle with their long horns. The young talented chef is from the nearby village. He grew up as a farmer and has tremendous ideas of combining seasonal goods for the most interesting menus. We hope to expect more interested guests for this adventurous area to help us to develop the project and create even more opportunities to work at Homoki Lodge.
Our top tip of a program with natives from the region: Hungarians love their food! Do try as many of the local dishes as you can fit in; they are delicious! Take part on a lovely day tour whether on a horse driven carriage or on horse back, which is taking you through the differing Puszta landscape to a fishing lake. A local fisherman will prepare for you the traditional Hungarian fish soup Halαszlι, in the cauldron over an open fire. This dish is seasoned with the "Hungarian Gold", the powder of red pepper. Enjoy your meal and relax at the stunning lakeside before heading back to a sun downer at the fabulous Homoki Lodge.
