At our Palencia hotel we support local producers, selling and showing their products at the hotel. In the hotel we use local olive oil, wines and cheeses. We do this not only from an economic point of view but so as not to loose the traditional crafts and heritage of the area. We organise and participate in gastronomic festivals promoting local products.
Our staff is comprised 88% from Palencia and the local area. We offer training to our staff, especially by Joaquin Koerper in the kitchen (he has in total 5* Michelin). We have local training programmes with specialized schools in the area.
The hotel is placed in a town of 400 inhabitants. People are leaving their own towns in order to go to the city. Towns are starting to be empty as they do not find employment and they can not live from theirs fields due to the lower prices are paying (impact of entering in European Community).
Our Palencia hotel offers employment and training to the people of the town, and houses are starting to be occupied again, shops and bars are opening and life is coming back to this beautiful and peaceful town of Ampudia.
We have a policy of recycling: we have started an environmental managing programme, which is including separation of recycling materials, through all hotel departments. We recycle oil through local council. As a Palencia hotel comitted to sustainability we use products that minimise their energy useage: low energy lights, automatic dosificators in washing machines, consume control water diffusers, bio-degradable products.
We use solar pannels for our swimming pool heating and also to assist a.c.s. Information for the guests about energy saving possibilities is in the hotel, and ecologic routes for respectful excursions, etc. We are preparing a respectful environmental manual for our clients, as a complement of the recommendations that are already set in hotel rooms. All excursions we propose to our clients are environmentally respectful and we encourage the visit to local producers: wine, pate, cheese, etc...
