How this holiday makes a difference
Environment
Eco-Friendly
At La Tavola Marche, We try to leave as small of an eco-footprint as possible. We use the crops grown on the property & in our organic farm for meals, cooking classes & conservation, raise free-range chickens, compost, recycle,
Lights are on timers, linens are changed twice a week and laundry is hung to dry. Guests are encouraged to recycle, compost & help feed the chickens.
Solar heat exchange panels on the roof, not only heat our water but radiators as well. This greatlys cut down on our CO2 emissions and another step in becoming self-sufficient.
Mineral Water Spring
Sulphorus mineral water is found on our property and used for drinking, farming, bathing, and in the swimming pool. Sulphorous does not mean odorous! The water is highly regarded for its healing potential. The mineral water sources found in Le Marche have remarkable beneficial and remedial properties both in thermal treatments (bathing and at the pool) and when bottled for drinking. The waters found at Agriturismo Ca'Camone have large amounts of hydrogen sulphide making them unique for many reasons:
- It is known to increase local and general defenses and is scientifically proven to boost antibodies
- potent anti-inflammatory effects
- stimulates cellular renewal and growth of skin
- important sedative, muscle relaxant, and analgesic action deriving from the sulphates, calcium, bicarbonate, and magnesium
- suitable treatment for chronic respiratory system, osteo-articular, and skin (acne, eczema, psoriasis) complaints.
- The therapeutic properties of ancient thermal medicine were proven in ancient times, and they are defined "the continent of Europe's traditional medicine" by the the World Health Organization.
Community
As an agriturismo 80% of the food that we serve is from our own land or the land of our neighbors.
Slow Food
As Members of Slow Food International we follow & share the philosophy that everyone has a fundamental right to pleasure, and, consequently, the responsibility to protect the heritage of food, tradition, and culture that make this pleasure possible. The movement is founded upon this concept of eco-gastronomy-recognition of the strong connections between plate and planet. "Farm to the Table" experiences can truly transcend the holiday-many guests return home excited to become more connected to their food and start digging their own gardens or expanding their current ones.
We try to practice a 0km diet - cheese, meats, fruits & veg are all from Le Marche, Italy. We grow our own fruits & vegetables in our organic garden or from the local frutta vedure in town. We slaughter & butcher our free range fowl, other meat comes from a farmer up the road with pigs and cows. Wild game, mushrooms, truffles and greens are foraged from the woods behind our house! Not only is this important in the quality & freshness of the food but also to cut down on the energy used for it to arrive on our table at the same time supporting our local farmers.
Our main crop is alfalfa, we also grow a little grove of fruit trees (apples, pears, plumbs, cherries & apricot). In the garden we grow: peppers, fava beans, barlotti beans, green beans, strawberries, eggplants, zucchini, cucumbers, squash, 12 varieties of tomatoes, onions, loads of herbs, lettuces (like spicy ruccola), numerous varieties of cabbages & kales, melons, pumpkins, squash, broccoli, cauliflower, potatoes & more.
