Environment
We and the Tunisie and North-Africa have a lot to do.
The people have to learn democrative life with each other and in the business.The corruption has to desappear.
My environment in the touristik sector has a big responsabilyty in tha last 30 years the made huge mistakes of the cost of the poor people and the nature.
We have to organize and minimize the rubbish.
For example we dont change the towels every day or ask the guests to save the water and take only a short showers.
We dont heat our rooms if only nessessary and minimize the waste of electricity.
The plastik allover is a big problem. I ask the local market seller not to use the plastic bags by selling their goods.
In our house we only use matural materials there is no plastik.
No plastic garden furniture. No plastic dishes or plates.
We have our own water it is coming from 100 m under the earth, it is very difficult and sensitive system.
For heating the water we have renewable solar energy system.
We have to oganize the recycling the glass, metall,electronic shut,oil, and poison.
We and the tunisian people have to organize the cleaning of the streets,roads and towns to keep the people healthy.
The money which we pay as taxes has to go to pay the costs.
My environment has to declare their employers, pay the salaries ,each month at the same time, declare the medical security.Even now there is no security for all the people.
My environment also have to respect the ethic and cultural tunisian life.
My environment has to save the water ad the natural resources and help to develope th.e natural sources as solar energie,water cleaning systems .
We built our buildings with the local workers. We used natural, local materials and handicraft. We buy all the goods we need from the local markets ans producers.
Tunisian wildlife is a very sensitive because of the hot periods in the summertime there ist no growing period for the plants and they get burned.
We planted medittenean plants which shoud be used to these temperature and we try to get attention all the time.As special the earth corrosion you can beat with planting the right plants and with getting care of them and the land.
Community
The tourism and travelling sector has to respect the local citizens.The tourism sector have to take care of their employers even in the bad years, in form of paying the salaries.
The tourist and thats the way i am asking my guests to do to dress themselfs respectfull in the markets local places.
I am already 15 years in Tunisie and i know my neighbours in the vilage and in town very well and they know and respect me and our guests.
Our workers are from the village and we have also all the time young people who are learning the horsemannship in our stud and ridind center.
Our workers are payes from their work regulary and they are insured by the local medical system.
Our workers are also getting input to learn more to have an interest to the languages for example german or french.
They are learning the gardening and planting and getting happiness from working out something beautifull with their hands.
They are getting interest to take care of themselfs and to take responsability.
I have been seeing that they change their way of living fron one day to another,to having a plan for they future.
We try to present autentic tunisian life and culture.
Our mediterrnean, tunisian, oriental tasty cooking is very famous and at Domain El Manar you find a good and healthy tunisian self made , fair trade food.
We organize for the guests who have an interest in cooking, courses in preparing spices and oriental cooking.
We take the quests with us to the local markets when we go to buy the goods that we need.
Domain El Manar is situeted in the middle of huge olive tree woods we have 55 big, old olive trees and we produse our olive,
The olive trees are holy plants for the tunisian people and for us.You can follow them from the spring time by blowing up to the time to pick up them.
Everything what is coming down fron the trees we use.
The leaves , pieces after cutting and the rest after pressing the oil is a rich nurriture for the whole wintertime for our sheeps,dromenade and horses get two times a year a cure with olive oil.
I also want to explane our guests that Tunisie is a seasonal country we eat only that what is crowing at the moment.For example the strawberries are only in april and the peaces only in june, juli and the green salad andcarrots only in the wintertime because hot temperatures they dont grow.
Also the meat we dont use in big quantities there is not too much animals and we have to have care and respect of them.There is allways not enough to eat for them.
The ocean is still rich of fishes but we have to take care.
So there is a lot to tell and explane to understand eachother and thats is the way which makes the life worth to live together.
