How Spanish Pyrenees historic B&B makes a difference
Environment
During the restoration of the house as much of the original stone, tiles and wood were reused in its reconstruction as possible. Traditional floor tiles were used and the walls were rendered and finished using old established techniques.
The rectory has 3 solar panels on the roof that provide hot water whenever possible reducing our dependency on conventional sources of energy. Low energy light bulbs are utilized wherever possible. Rainwater from the roof is collected in the old well and a further water deposit for watering the garden. We separate our rubbish prior to disposal and organic matter is composted.
As well as arriving here by car guests you can come on foot or by bicycle along the cycle path. When guests stay with us they can visit and experience many of the local places of interest either by bicycle or on foot and some visits such as that to La Fageda d'en Jorda can be made by horse drawn carriage.
The area has a diverse range of fauna and flora, from wild boar, badger and wild cats to butterflies and native orchids. We are in contact with local guides who accompany visitors on bespoke tours of the natural and historical places of interest.
Community
In the kitchen we use local ingredients in our menu and buy very good quality beef, lamb and pork from the butcher who in turn rears his own livestock. We also purchase cheeses and pulses from the local agricultural cooperative and all of the wines we offer are Catalan. We are also sourcing traditionally produced rice from Empordà on the coast and are actively seeking other locally grown and produced ingredients such as olive oil and beer.
For guests who wish to eat elsewhere we recommend local restaurants. We also offer them help and advice on local walks and places of interest and help guests to arrange bicycle hire which in turn are delivered to the house. We can also help arrange balloon trips that offer a unique perspective of the local landscape.
Each year in the first weekend of October the rectory hosts the local community gathering (Aplec) which is attended by 250 people from the local community. This event starts with a Mass in the chapel next the house, followed by a paella and three course lunch and traditional dancing (Sardana) in the patio at the front of the rectory.
Each February we contribute to the sponsorship of the carnival parade in the local village of Sant Feliu de Pallerols.
