We are a family of four: me and my husband were born in Rome, and we have lived here in the Sabina hills since 1987. We are part of the local community and of many local cultural and social associations. I am part of group that is currently working on exchange and preservation of local trees and vegetables plants; we try to protect the environment through bio-agriculture and transmission of old knowledge to new generations.
The farmhouse is part of a 3 hectare organic farm where we've produce organic olive oil since 1994. The use of machinery is reduced to minimum and we - personally - collect olives by hand. The house is heated with a wood stove. Most of the wood comes from the pruning of olives trees on our own land. All organic waste is recycled through the use of compost on our vegetable garden. Paper goes into the stove and all the rest is divided and recycled in the municipality's waste system. We use energy efficent light bulbs and minimise on household appliances; no dishwasher, no tumble-drier etc. Vegetables and the garden are watered with water from a spring on our land.
We buy all our food from the producers nearby and we process our olives - to make olive oil - in the local mills. For all the work we did to restore the farmhouse we employed local workers. As a self catering accommodation, guests are encouraged to make their purchases in local shops, eat at local restaurants, visit local attractions, use local sports opportunities etc. For our guests, information is available at the cottage, and recommendations are made. There are a number of independent businesses and shops in the village to which guests are directed. Just 15 km from here there are frequent trains to Rome and we always recommend this means of transport to anyone who wishes to visit Rome.
