Wine tasting in Spello.
You will benefit from not following the crowds thru Rome, Venice and in between. Some of the best shops, people and sights were along the narrower, less popular streets.
I know it did. We stumbled on a very local benefit cook-out for a church restoration in Venice. We enjoyed dinner there which also included a live band, and felt good that proceeds were going to a good cause.

Cycling through some beautiful areas of Italy with a great, mixed group.
Get some cycling practice in - most of the riding is on quiet roads, so worth getting used to traffic.
Not sure it particularly benefited local people, although meals were often in local restaurants.
