How this holiday makes a difference

Food and discovering new places and cultures go hand in hand. As part of the experience of traveling to Tuscany, we offer our guests the chance to learn some of the tricks and signature dishes of Tuscany, such as pasta making and creating a perfect tiramisu. Guests can book local chefs, Lucia and Loredana to prepare a typical three course dinner in their own apartment combining this with a cooking lesson if they wish. Lucia and Loredana use organic products on request and seasonal menus are offered, taking advantage of the best fresh local produce.

Aside from Italian cooking, guests are invited to learn the art of sourdough bread baking. Using biodynamic flour freshly milled at Camporbiano, a BD farm only 20 minutes away, guests can learn how to bake bread and muffins at home. Sourdough bread is made using the wild yeasts and bacteria in the air, a process which breaks down the gluten structure making the finished loaf easily digestible and nutritional – as well as delicious! The bread is baked in our wood-fired oven, which was built ourselves with extra insulation so there is less heat loss and therefore less wood used. Ken Hercott, the baker, is not Italian by origin, but is currently a resident of the farm and is a strong proponent of a self-sufficient lifestyle and healthy living.

One of the unique experiences offered on our farm is a chance to be a part of a white truffle hunt. In the Autumn, from late September to early December, our truffle hunter, Imperio, together with his dog search the humid valleys in the middle and on the edge of the woods for the rare and valuable funghi. Guests can join Imperio while a guide explains the techniques and gives an insight to the history and culture of truffle hunting, finishing the 2 hour walk with a well-deserved glass of Chianti and a sample of cheese, olives and salami.

Our farm is an integral part of the local economy as a known location for truffles. During the season locals can search our woods for the rare truffle or other mushrooms, such as porcini. Inviting guests to be part of this unique experience gives an insight into Tuscan culture and the art of foraging as well as allowing guests an opportunity to meet with one another.
