Food is a particular feature of this holiday and you will get the chance to eat in some excellent restaurants run by well-known Mexican chefs. The variety of food on offer is immense, with meat and grains predominantly in the mountains, and fish by the coast. Vegetarian diets can easily be catered for as can anybody preferring a more familiar menu. When taking reservations for groups in local restaurants, it is the policy of some restaurateurs to offer one set menu, served to everyone at the table (with the exception of vegetarians, vegans and gluten free). Vegetarian and vegan options are often available, though menus may vary by location, so we recommend checking and letting us know in advance to ensure dietary requirements can be accommodated.
ENVIRONMENT AND WILDLIFE
We operate a ‘leave no trace’ policy in national parks, archaeological sites, monuments and other sensitive areas like beaches and coastlines; these should be treated with the ultimate respect to maintain them for future generations. Our tour leaders are trained to promote this message to our customers during the holiday.
Some of the hotels in this tour have implemented several sustainability-oriented practices such as eco-friendly housekeeping options and energy- and water-saving efforts for example. The second half of your trip will be spent predominantly within indigenous mountain communities, which have organised tourism around sustainable use of their natural environment, local culture, and low-impact stays rather than large commercial development. This co-operative ecotourism model helps to protect forests, generate local income, and maintain traditional ways of life.
You will be staying in rustic cabins built with local materials, where you can explore community-maintained trails, enjoy hiking, mountain biking and horseback riding in the cloud forests, and experience local culture. All of these activities emphasise a connection with nature and conservation rather than disruptive tourism.

LOCAL ECONOMYWe provide ample opportunity to explore the local areas on foot, where you can shop for local wares and crafts and immerse yourselves into the rich cultural heritage of the destination. To enhance your experience, as well as your tour leader, each holiday will be accompanied by a well qualified and knowledgeable English-speaking local guide. Visiting historical sites, churches or museums are much more rewarding with a local guide. They give an insight to the local culture, language and traditions and can bring a destination alive.
